A completely inverted sugar in paste form. It creates a lovely brown colour in cookies and acts as a moisture stabilizer for longer shelf life and freshness in waffles and bread. In ice cream it lowers the freezing point and improves scoopability, and it helps prevent hardening of fillings in chocolate, truffles and cream applications.
